Some of this is already available:

- wipe - allow two or three wipes with random data

File > File Special > Wipe.

- allow us to hide the menu bar - press Alt to show

I'm asking for more control over Wipe.

For what? Overwrite something a single time with zeros and ... it's gone. Forever. You CAN'T restore it. Ofc we are talking about overwriting every byte of the file, not only metadata.
