Open with menu - customizing this

I read the help section about PFA and POM.
But I see that the open with menu is same as the
regular windows explorer.

Also some of the items in the right click menu in the windows
explorer (unlocker see picture below) doesn't show up here.

How to ensure unlocker shows in the right click menu of XY and
see only PFA in the open with menu.

The open with-menu is part of the Windows default shell context menu and is unrelated to XYplorer; it simply inherits it from Windows.

The entry points to PFA and POM are mentioned in the help file:

The Portable Openwith Menu (POM) is opened via menu File | Open With... (Ctrl+Alt+Enter), or via the "Open With" toolbar button.

Also, PFA's are used in preference to Windows's file associations, when double-clicking of pressing Enter with one or more files selected.

I'm guessing that you're running a 64-bit version of Windows, in which case this FAQ applies.

It generally helps to list both your Windows as well as your XYplorer version, when posting.
