Get shellexview x64 from nirsoft, check your preview handlers.
Obviously something's wrong on your OS when even Windows Explorer can't preview a .pdf anymore...

I already have shellexview, that's how I got the guid for edge.

Windows Explorer suddenly is previewing .pdf again, without any intervention...

I double-checked the guid I got from shellexview for edge, and it's correct in XY.

What do you suggest, install and try Sumatra again, or other action?

I'm using the old stable 3.4.6 x64 version here and it has worked flawlessly ever since

I got it working by removing the "User-Defined Preview Handler" associated with Sumatra (it was the only one).

It's working with both 3.4.6 and 3.5.2.

Windows Explorer is also displaying the preview.

I don't know what was wrong, but anyway, it's working fine now!

Thanks!
