In recent versions "Sort by" is stuck on "Size", I always had it on "Type", saving and restarting doesn't work. It will even revert to "sort by size" just by opening a different folder.
Any idea?

Sort a folder by type. Then select Main Menu->View->Folder View Settings->Define this Folder View as Default

I think this whole list view configuration matter still is just a bit too confusing. For instance, a (optional) visual indicator for "FVS is applied" could come in very handy.

Me too. There are just too many options to control the same view: FVS, tab, global, list type...I think this whole list view configuration matter still is just a bit too confusing.
