How can I see the names and images of all the <xydata> icons available for use with user toolbar buttons?

you mean names of all internal XY icons? just use Customize Toolbar on button you've added(not XY default)- names of icons will be in [ ].

Yes. So how do I use one of those names in [ ] to specify the icon for my user button?. For example, I want to use [lasttarget] icon. Just entering [lasttarget] doesn't work.

use :lasttarget.
