Details view shows all columns and not the ones I've defined

Most of the time I want to use a specific view for certain filetypes (e.g 'Thumbnail' view for photos/jpgs) but occasionally I want to temporarily switch to 'Details' view so that I can see more specific info on a file (e.g. the Date Taken column).
I've setup a default view for 'Details' that I like with just a few minimal columns and saved it via View>Folder View Settings>Define this Folder View as Default. But when I go to some of my thumbnail folders and switch the view to Details, it shows loads of extra columns (e.g. Attr, Label, Tags, Exposure Time, Extra 6 etc.) and not the minimal layout I defined as default.
It seems I have to first go to View>Folder View Settings>Apply Default Folder View before it will apply my minimal details view.
Is what I'm trying to do possible, i.e. create a custom minimal default Details view that I can quickly switch to for any folder?
