Is there a way to prevent editing in the preview window? For instance, when I click a Word-document, a Word-session is opened in the preview pane which allows me to edit the file. I would rather just preview the file (as the tab caption suggests) in for instance Word's Read layout mode.

I don't think that's possible. I'm simply using an embedded IE here as Office doc viewer. I have no control over how IE is handling the job.
