Is the undo function really so limited?
It can't remember drag & drop, cut, duplicate... etc
I'm I missing something?

Depends. When you drag and drop to outside of XY the target performs the operation and is responsible for any undo.

Nah, after some more testing it turned out to be in "File Operations - Use Custom Copy", disabling that solved it.
You might want to look into it.
