I would like to "fix" the way files are shown under view - sorted by most recent files on top. I am not sure what the default is but too often I come back to the same favourite folders and the sorting is different. Is there a setting I can control that the default sorting of any folder is by most recent at the top?

Yes using Folder View Settings, just set a default that applies to sort order. if you already are using it for your favorite folders you mentioned, you'd also need to update their FVS.

View | Folder View Settings | Define this Folder View as Default
