Steps to reproduce:
1. Tools -> Configuration... -> File Operations -> Custom Copy Operations -> Configure... -> Preserve all item dates (Preserve not only Modified but also Created and Accessed date in the copief of files and folders.)
2. Tools -> Configuration... -> File Operations -> Custom Copy Operations -> Use Custom Copy
3. Copy a file and paste to another path, see the screenshot
4. The Accessed date was not preserved by the source. The source has this date:
7/25/2021 7:11:13 AM
5. The destination has the current system time: 7/25/2021 8:09:32 AM
Accessed Date is not preserved

Can't test it fully here because I have disabled Last Access Date for NTFS (its waste of SDD writes and CPU cycles)
but all entries are copied for me and Last Accessed is not set to the current date.
