Virtual drives not appearing in XYplorer 21.20
If I create a virtual drive using software like VeraCrypt and then mount the drive, the drive shows up just fine in several other file managers, but doesn't show up at all in XYplorer.

Can't confirm with VeraCrypt 1.24-update7 and XYplorer 21.20.0200 on Windows 10 20H2.
Does running a fresh instance of XYplorer make a difference?
If not, does assigning a different drive letter make a difference?

Yes! Running a fresh instance does show the mounted virtual drive. Which settings would affect the suppression of seeing the drive?

Possibly View > Auto-Refresh?

I *have* enabled View > Mini Tree > Mini Tree. Using View->Auto-Refresh doesn't seem to help. Also a manual refresh (F5) doesn't help. Changing the drive letter doesn't help.
The mounted virtual drive does show up in XYplorer if I run a "fresh" instance, but not with my current settings. I've tried toggling on and off multiple setting to try to isolate where the problem is, but have not succeeded.

One way around your problem: create a toolbar button for the (fixed) drive letter of your VeraCrypt drive?This is where Mini Tree comes to the rescue. It's an extremely simple idea, but it might change your way of browsing the file system forever: The Mini Tree displays only the paths you have actually used.
